No Bake Energy Snacks

Three years ago when I started Orange Theory, a great high energy workout, I was told about these awesome protein balls that are only about 100 calories and are a great quick healthy snack.

“What the heck is a protein ball?”, I asked.  I tried them and three years later, these little balls are a weekly staple in my house.

When my coach told me about these little bundles of peanut butter mixed with scrumptious healthy ingredients that you mix together in no time and stick in your freezer, I had to try them.

I wanted to share them with you, so you too could have these yummy healthy snacks in your frig to just pop in your mouth instead of cookies or chips.

Ingredients:

1 cup oatmeal ( I use Trader Joe’s 100% rolled oats)

1/2 cup chunky peanut butter ( or other nut butter)

1/2 cup unsweetened desiccated coconut

1/2 cup mini chocolate chips

1/3 cup honey

1/4 cup chia seeds

2 tbsp. flaxseed meal

2 tbsp. protein powder ( vanilla or chocolate)

1/4 tsp. cinnamon

Instructions:

  • Mix all ingredients into 1 1/2 inch balls
  • Put on parchment paper laid on cookie sheet
  • Freeze for 1 hour
  • Store in airtight container up to one week.
